Fakes Ksithates (Lentil Soup with Vinegar)

Ingredients:

  1. 1 cup of Fakes (Lentil)
  2. 2-3 spring onions finely chopped
  3. 8-10 stalks of coriander leaves finely chopped
  4. 2-3 lettuce leaves finely chopped
  5. 3-4 cloves of garlic sliced
  6. 1 tbsp of flour
  7. 1-2 bay leaves
  8. 1/2 a cup of vinegar
  9. Chopped parsley for garnishment
  10. Salt and pepper to taste

Lentil Soup with Vinegar

This soup is usually made during Greek Orthodox fasting days.
The ingredients listed are for 4-6 servings.

Method

  • Wash the lentil and place in a deep bowl with water to soak overnight if you like. Not necessary.
  • Place lentil in a pot, cover with fresh cold water and bring to boil.
  • Boil for a few minutes, strain and replace the water with fresh.
  • Bring to boil, lower the heat and cook for about 45 minutes.
  • Add the bay leaves, chopped onions, coriander leaves, lettuce leaves and sliced garlic.
  • You can add more vegetables if you prefer, like carrots and celery.
  • Simmer the lentil soup for about another 20 minutes on low heat.
  • Dissolve the flour in a small bowl of hot water and gradually pour into the soup while constantly stirring.
  • Add the vinegar, salt and pepper to taste and stir to mix the vinegar with the broth.
  • Simmer for about another 5-10 minutes.
  • Your Fakes Ksithates (Lentil Soup) is ready to serve.
  • Place in a deep soup bowl or individual bowls garnish with some chopped parley and serve hot.
  • Lentil Soup can be accompanied with Kalamata olives, fresh bread and grilled Herring fish.
