Ravani or Shamali (Semolina Cake)

Cake ingredients:

  • 1/2 a cup of corn oil
  • 1/2 a cup of rose water
  • 1/4 cup of peeled split almonds
  • 1/2 a tsp of baking powder
  • 1/2 a tsp of vanilla powder
  • 2 cups of semolina
  • 1 cup of sugar
  • 1 cup of yogurt

Ravani or Shamali (Semolina Cake)

Syrup ingredients:

  • 1 cup of water
  • 1 cup of sugar
  • 1 tbsp of lemon juice

Method:

  • Place the semolina in a bowl with oil and mix well.
  • Add the rest of the ingredients, except for the almonds and mix well.
  • Pour all the mixture in an oiled pan, decorate the top with the slit almonds and bake in medium heat for about an hour until is golden brown.
  • In the meantime until the cake is cooked, place all the ingredients for the syrup in a sauce pan and boil for about 10 minutes.
  • After the cake is cooked and before it cools down pour the syrup over it and let it cool down before serving.
