Ingredients:
- 500g of flour
- 40g of yeast
- 200g of yogurt
- 6 tsp of olive oil
- 1 bunch mint
- 300g of Graviera Cheese
- 2 packs of Halloumi Cheese
- 1 tsp salt
Method:
- For informational purposes, when mixing ingredients for dough, all the ingredients should be at room temperature.
- Halloumi Cheese is made out of Goat milk and is the National Greek Cheese of Cyprus.
- In a mixer we work the flour the yeast and yogurt.
- Add the olive oil and salt.
- If needed, add some more yogurt or some lukewarm water.
- The dough has to be soft.
- Take it out of the mixer and knead it with your hands for a few minutes.
- After knead it by hand, place in a bowl, cover it with a kitchen towel and let rise for about 45 minutes to 1 hour.
- The dough after an hour will be about four times the size you originally placed in the bowl.
- Place the dough on your counter or a board and flatten it out by hand or with the rolling pin.
- Grade 3/4 of the two cheeses and fine chop the mint over the dough.
- You can use any kind of cheese you prefer as long as one is salty and the other mild.
- Take the ends of the dough and bring them over the cheeses and mint.
- Knead the dough well with the mint and cheeses and spread it out again flat.
- Pour some olive oil in your baking pan and spread it all over the bottom of the pan.
- Place your dough mixture in the baking pan and spread it out.
- Cover it with a kitchen towel and let rise for 30 minutes.
- Sprinkle with remaining cheese over the top and bake in a preheated oven for about 40 minutes at 200 degrees Celsius (See conversions for Fahrenheit) or until golden brown.
- Tyropsomo me Halloumi (Cheese-Bread with Halloumi) can be eaten hot or cold.
- It can be served as an accompaniment with a nice cup of coffee or tea.
