Ingredients:
- 1 cup of bulgur washed and drained
- 1 cup of red lentils washed and drained
- 1 large onion finely chopped
- 1/2 cup of olive oil
- 1 tbsp of tomato paste
- 2 tbsp cumin
- juice of 1 lemon
- 1 tsp of salt
- Pepper to taste
- 1/2 cup of parsley, chopped
Method:
- Wash the lentil under plenty of running water.
- Place lentil in a pot with 2 1/2 cups of water and cook on low heat.
- In the meantime wash and drain the bulgur.
- Add the bulgur in the pot with the lentil stir to mix and cook until all the water is gone.
- Remove the pot from the heat, cover the pot with a kitchen towel and set aside.
- In another pot pour the olive oil and sauté the chopped onion.
- Add the tomato paste, lemon juice, salt, pepper to taste and gamin.
- Stir well for the tomato paste to dissolve and mix with the rest of the ingredients.
- Add the lentil and bulgur mixture and stir well to mix with the all the ingredients in the pot.
- Cook on low heat, stirring occasionally for about 8-10 minutes until the mixture becomes doughy and starts to leave the sides of the pot.
- Cover the pot and put aside for about an hour.
- Mix in the chopped parsley by using your hands and give them the shape shown in the picture.
- Place in the refrigerator to cool them down.
