Ingredients:
- 2 cups of dry black eye beans boiled
- 1 dry onion finely chopped
- 1 cup of water (hot)
- 1 tomato finely chopped
- 3 fresh green onions
- 3-4 small leeks
- 1 bunch of fennel
- 1 bunch of chard roughly chopped
- 1-1 1/2 cup of virgin olive oil
- Sea Salt
- Black or Green Pepper
- Cumin (optional)
Method:
- The legumes can be combined with any green vegetables, as long as they have sweet or neutral flavour.
- They are not suited by no means with the bitter green vegetables.
- The black eye beans should be boiled.
- This means that from the night before we have put them in water to soft them up and the next day we boil them for thirty minutes until they are tender (it may require more time of boiling – depending on the beans).
- We begin the cooking.
- Heat up some of the olive oil in a saucepan and sauté lightly the dry chopped onion until translucent.
- Mix well and throw in the boiled black eye beans.
- After 2-3 minutes, add a cup of water (hot at preference in order not to stop the boiling).
- Cover the saucepan and leave it to simmer for a few minutes.
- Wash all the green vegetables well.
- One way to wash the green vegetables and make sure that we have gotten rid of all kinds of micro-organisms and other damaging elements, is to do the following:
- Wash them well first under plenty of running water and afterwards sink them for 10 minutes in a bowl with fresh water and vinegar.
- Drain and cut in big pieces the washed vegetables, that is to say the fennel, the fresh green onions, leeks and chard.
- Wash and finely chop the tomato.
- Add the chopped vegetables and the chopped tomato in the saucepan with the beans that are boiling and salt and pepper to taste.
- Note that it is suited better with the green vegetables to use green powder pepper if any available instead of black.
- As soon as the green vegetables are scalded well, in other words they take is to say 1-2 boils for about 7-8 minutes, the food is ready.
- If we have used less quantity of oil in the cooking, we can add the remainder, (raw) on the table during serving for anybody wanting to add some in his plate.
- Finally, we can add some cumin (optional).
- Fasolia Mavromatika me Xorta (Black Eye Beans with Greens) can be accompanied with some Kalamata black olives, fresh green onions, sliced tomatoes and cucumbers.
