Ingredients:
- 1 kilo of pork ribs cut in small pieces
- 1 lb of mushrooms cut in quarters
- 1-2 tbsp of flour
- 1/4 cup of olive oil
- 2 large onions chopped
- Finely chopped parsley
- 1 1/2 cup of red dry wine
- Salt and pepper to taste
Method:
- Wash the pork ribs and season with salt and pepper to taste.
- Coat pork ribs with flour.
- Cut the onions in half, turn flat side on the board and slice.
- Clean mushrooms and cut in quarters.
- Heat up the oil in a pan and fry the pork ribs on all sides.
- Add the onions and mushrooms, season to taste and fry until the onions are translucent and mushrooms are soft.
- Add the wine, lower the heat, cover the pan and simmer for about 1 hour or until a thick sauce is formed.
- Stir occasionally to cook ingredients well from all sides.
- Place in a platter and garnish with chopped parsley.
- Serve Chirino me Manitaria (Pork Ribs with Mushrooms) hot.
- Chirino me Manitaria (Pork Ribs with Mushrooms) can be accompanied with boiled vegetables, mush potatoes or anything else you desire.
