Ingredients:
- 1 Medium chicken cut in quarters
- 6-8 peeled potatoes cut in quarters
- 2-3 zucchini cut in 3 pieces each
- 5-10 whole small onions
- 1/2 cup of olive oil
- 1 cup of white dry wine
- 1 cup of hot water
- 2-3 ripe tomatoes cut
- 1 1/2 tbsp of tomato paste
- 1-2 bay leafs
- Salt and Pepper to taste
Method:
- Heat the olive oil in a casserole and fry the chicken to light brown on both sites.
- Remove the chicken and sauté the onions for about 3 minutes while stirring.
- Remove the onions and do the same with the potatoes and the zucchini.
- After you sauté the chicken, onions, potatoes and zucchini put everything back in the casserole mix them up and add the wine.
- Bring to boil and add the rest of the ingredients.
- When it comes to boil, reduce the heat, cover the casserole and simmer for about 45 minutes.
- At this point the sauce should be thickened and you food should be ready to serve.
- Serve hot with a glass of red dry wine.
