Ingredients:
- 4 oz. halloumi cheese chopped
- 6 eggs lightly beaten
- 2 Greek sausages sliced
- 6 green onions chopped (scallions)
- 1 onion sliced
- 5 oz. ham chopped
- 1 zucchini sliced
- 1 tbsp of olive oil
- 2 tbsp of sour cream
- Salt and pepper to taste
Method:
- In a large size bowl, break up the eggs and beat lightly.
- Add the sour cream, green onions, salt and pepper to taste and whisk well to combine all ingredients.
- Set aside for the moment.
- Heat up the olive oil in a medium non-stick ovenproof frying pan.
- Add the sliced onion, the sliced Greek sausage chopped halloumi and cook for 3-4 minutes or until onions are soft and the Greek sausage is golden brown.
- Add the zucchini and cook for a further 3 minutes or until just soft.
- Add the chopped ham, the egg mixture and stir to combine the egg mixture with the rest of the ingredients in the pan.
- Place the pan in the preheated oven to 350 degrees and cook for 15 minutes or until the eggs are set and the top is golden brown.
- Remove from the oven and serve while is hot.
