Ingredients:
- 1 kg of small fish (red mullet)
- 4 tbsp of flour
- 2 ripped tomatoes grated
- 1/2 a cup of wine vinegar
- 5-6 tbsp of olive oil
- 1 cup of water
- 3 garlic cloves chopped
- 2-3 springs of rosemary
- 1 bay leaf (optional)
- Salt and pepper to taste
- Flour & olive oil for frying
Method
- Clean and wash the fish under plenty of running water.
- In a deep plate mix the flour with salt and pepper to taste.
- Take one fish at a time and deep it into the flour mixture making sure that is very well coated.
- Ones all the fish are coated with flour; fry them in hot olive oil until golden brown on both sides.
- Place the fried fish into a baking pan one beside the other.
- In a clean frying pan, heat up the 5-6 tbsp of olive oil; add the 4tbsp of flour and stir until is dissolved.
- Add the vinegar, rosemary, chopped garlic, bay leaf, grated tomatoes and water.
- Stir until is boiled and until a batter is formed.
- Pour the battered mixture over the fish and bake in a preheated oven at 350 degrees Fahrenheit for about 10-15 minutes.
- Remove from the oven, let it cool down and refrigerate.
