Ingredients:
- 1kg fresh squid
- 500g fresh spinach
- 1 large onion, chopped
- 3 spring onions, chopped
- 120 ml extra virgin olive oil
- 175 ml white wine
- 150 ml hot water
- 3 tblsp fresh dill, chopped
- juice of 1/2 lemon
- freshly ground salt and black pepper
Preparation:
- Try to buy small squid as they are more tender than the larger ones.
- Clean the squid thoroughly inside and out and then drain.
- Cut the body in half lengthways and the slice the body into 1cm strips.
- Cut the tentacles into smaller slices as well.
- Using a large non-stick heavy pan, heat the oil and fry the onions until they start to take a colour.
- Add the squid and stir.
- Cook for about 10 minutes until they turn a golden colour, stirring from time to time.
- Pour in the wine, stir and let it evaporate slowly.
- Add the hot water and salt and pepper.
- Cover and cook for another 30 minutes, stirring occasionally.
- Wash the spinach and drain, shaking off any excess water.
- Cut off any stalks and chop the spinach roughly.
- Add the spinach to the pan and stir in.
- Once the spinach starts to wilt, cover and cook another 10 minutes.
- Add the lemon juice and dill and mix together well. Serve.
